Serena Fantasia, a doctoral student at HES-SO Changins, is conducting innovative research as part of the DRY50 project, within the ‘Yvorne Grandeur Nature’ initiative. Since spring 2024, horticultural tunnels have been installed on experimental plots in Yvorne to reproduce different water stress scenarios, ranging from average conditions to situations much drier than what the future holds.

The initial observations are already telling: under more intense stress, the grass turns yellow, the foliage shrinks, and the quantity and quality of the grapes decrease. Next autumn, wines produced under each of these conditions will be tasted to assess the impact of water scarcity on aromas and sensory characteristics.
